Il Caveau restaurant is located in the heart of the village. A charming location created by combining ancient monumental cellars. Guests are welcomed into rooms and dining areas on various levels and onto the large panoramic terrace overlooking the valley of the Lente River.

The cuisine is based primarily on traditional Maremma and non-Maremma products, prioritizing high quality. The menu is always seasonal and constantly evolving. Dishes are designed to satisfy even the most discerning palates, offering true culinary experiences.

Chef Diego Russo carefully selects the meats that are kept—strictly visible—in the maturing room. Among these are the Chianina, Galician, Manzetta, Danish breeds, and the Timanzo di Cinigiano selection, the restaurant’s flagship.
