The Il Caveau restaurant is located in the heart of the Old Town. A fascinating location created by combining ancient monumental cellars. Guests are welcomed in rooms and lounges arranged on various levels and in the large panoramic terrace overlooking the valley over the Lente river.
The cuisine is mainly based on the search for typical Maremma and non-Maremma products, giving priority to high quality. The menu is always in line with seasonality and constantly changing. The courses aim to satisfy above all the most demanding palates to offer real culinary experiences.
Chef Diego Russo carefully chooses the meats that are present – strictly visible – in the maturer. Among these, the Chianina, Galiziana, Manzetta, Danese breeds and the Timanzo di Cinigiano selection stand out, the restaurant’s flagship.
